Namkeen Sevai/Spicy Spaghetti/Savory Sevai
Namkeen Sevai, also known as Spicy Vermicelli, is a popular Indian breakfast or snack. This recipe is a quick and easy way to make it at home. It can be served as an evening or a breakfast snack.
Ingredients for Namkeen Sevai / Spicy Spaghetti:
- 200g vermicelli noodles
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 spring Curry leaves
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1 tbsp ginger-garlic paste
- 1 cup mixed vegetables (carrots, peas, beans)
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- Fresh cilantro, chopped for garnish
- Lemon wedges for serving
Cooking Directions for Namkeen Sevai / Spicy Spaghetti:
Step 1
Cook vermicelli according to package instructions, drain and set aside.
Step 2
In a pan, heat 2 tbsp of oil over medium heat.
Add mustard seeds and cumin seeds and let them crackle for a few seconds.
Step 3
Add chopped onion, green chili and curry leaves and sauté until the onion turns translucent.
Add ginger-garlic paste and sauté for another minute.
Step 4
Add mixed vegetables and sauté for 2-3 minutes until cooked but still crisp.
Step 5
Add turmeric powder, red chili powder, garam masala powder and salt to taste. Mix well.
Step 6
Add the cooked vermicelli and mix well with the vegetables and spices.
Garnish vermicelli with fresh cilantro and serve hot with lemon wedges.
