Masala Dosa

Ingredients 

For Dosa batter

  • 3 cups Rice 
  • 1 cup Urad dal 
  •  ½ teaspoon Fenugreek seeds

For Potato masala filling

  • 4 Potatoes 
  • 3 to 4 small Onion Chopped 
  • 2 Green chili 
  • 1 cup chopped Coriander leaves 
  • 1 teaspoon Chana dal 
  • 1 teaspoon Urad dal 
  • ½ inch Chopped Ginger 
  • 2 Red chili whole 
  • ¼ teaspoon Mustard seeds 
  • ¼ teaspoon Cumin seeds
  •  1 spring Curry leaves
  • Salt to taste
  • 2 tablespoon Oil 
  • ½ teaspoon Turmeric 
  • 1 pinch Asafoetida 
  • Green peas (optional)
  • Butter (optional)
  • Water

Directions

Dosa batter

Step 1

Wash and Soak rice, urad dal and fenugreek seeds in water overnight or for 6 to 8 hours.

Step 2

Grind soaked mixture into fine paste using the required amount of water in which it was soaked,you can use fresh water also if required.

Dosa batter has a medium-thick to medium flowing consistency and is easily pourable.

Step 3

Leave it for 8 to 10 hours for fermentation.

In the Indian summers, the batter ferments quickly and during winters it takes a longer duration of time. In winter, keep it near a warm place. I use it to keep it in a big wheat flour jar.

Potato masala filling

Step 1

Wash and boil the potatoes in a cooker for three whistles on slow flame. When pressure releases naturally,open the lid, take out potatoes and allow potatoes to cool down.

Step 2

Now peel off the potatoes and mash it with the help of a masher. Do not mash it completely. Some small pieces of potatoes taste good.

Step 3

Now you have to heat a deep pan and pour 2 tablespoons of oil in it. Add ¼ teaspoon of Mustard seeds, ¼ teaspoon of Cumin seeds, 2 numbers of whole red chili, chana daal and urad dal. Here remember to add chana daal first as chana dal is big in size then urad daal and takes little more time to cook. When your chana daal is slightly cooked, add urad daal.

Step 4

Now you have to add a little bit of asafoetida and Chopped Ginger, saute it.

Step 5

Now add sliced onion, Turmeric and mix it well.

Step 6

Now add Chopped Green chili and curry leaves. Saute it for 2 minutes.

Step 7

Now add salt and Saute till onion is slightly soft. Don’t cook until the onion turns brown. You can also add some green peas here.

Step 8

Now add mashed potatoes and mix well. Saute it for 5 minutes. Here you can also add some butter.

Masala dosa preparation 

Step 1

Heat an iron tawa or a flat non-stick tawa on medium flame. Apply some oil if using an iron tawa. Don’t apply oil on a non-stick tawa , as then you won’t be able to spread the batter easily.

Step 2

Now spread the batter in a circular way on the tawa. On a medium heat, cook the dosa.

Step 3

You have to sprinkle some oil above the dosa and on the corners.

Step 4

Now take some masala and put it above the dosa and slightly roll the dosa from both sides. Masala dosa is ready.

Serve it with sambhar and coconut-groundnut chutney.
