LAUKI JABAR RECIPE

Today I am sharing with you a bottle gourd recipe which is of Indian cuisine and the dish’s name is Lauki Jabar.

To begin with, what is aged rice and new rice? Well, aged rice or old rice but stocked rice which is kept for aging for one or more years. On the other hand, new rice is the one which is produced from newly harvested crops.

The new rice is more sticky, white, and glossy, with 3-20% more water content. To cook, it requires less water; when eating, it’s more plump, moist, and aromatic. So here I have used new rice in this recipe.

You can cook it for lunch. It is a complete meal. Fresh Bottle Gourd makes it healthy. Bottle gourd has been used traditionally to help with many health conditions like fever, cough, pain, and asthma. It has been used since ancient times for its benefits. It is also considered a good source of vitamin B, C, and other nutrients.

Ingredients for making Lauki Jabar recipe:

  1. Fresh Bottle Gourd (Lauki) 500 gm
  2. New Rice (chawal) 200 gm
  3. Ghee 2 tsp
  4. Cumin (Jeera) ½ tsp
  5. Milk (dudh) boiled 250 ml
  6. Whole dry red chilly (sabut lal mirch) 2 piece 
  7. Salt (namak) as per taste
  8. Water 500 ml

Directions for making lauki jabar recipe:

Step 1:

Wash rice and keep it aside, here I have used new rice as it tastes good and soaks more water and becomes puffed and releases thick starch. Basmati rice is not recommended. 

Step 2:

Wash and peel off bottle gourd and cut in small cubes, use fresh bottle gourd.

Step 3:

Heat a pressure cooker and add ghee in it, now add cumin seeds and dry red chilly after it splutters, add bottle gourd cubes and saute for 10 minutes till it gets soft.

Step 4:

Now you have to add rice and saute it for 5 minutes.

Step 5:

Now pour 500 ml water, salt in the cooker and close the cooker lid. Cook for one whistle.

Step 6:

Wait till pressure releases naturally, open the lid and add boiled milk and mix well. 

Your Lauki jabar dish is now ready to serve. Serve it hot for better taste!
