Ingredients
200g Tur / Arhar Dal
2 tablespoon Tamarind pulp
Salt as per requirement
1 teaspoon turmeric powder
2 glass water

Vegetables preparation
2 cups chopped vegetables of your choice (Brinjal, Bottle gourd, Drum stick, Raw papaya, Pumpkin)
1 tablespoon Ginger-Garlic paste
2 Onion
2 Tomato

For tempering
½ teaspoon Mustard
½ teaspoon Cumin seeds
½ teaspoon coriander seeds
2 Whole red chili
1 spring Curry leaves
1 pinch Asafoetida
½ teaspoon Fenugreek seeds
2 tablespoon Sambar powder

Directions

Step 1
First you have to rinse the tur dal thoroughly and soak it for 15-20 minutes. Drain the water and add the dal to a pressure cooker with 2 glasses of water, 1 teaspoon turmeric powder, and salt. Cook for 5-6 whistles or until the dal is soft and mushy.

Now chop onion and tomatoes. Then heat oil in a deep pan, add ginger-garlic paste saute for a minute. Now add chopped onions and sauté until they turn translucent. Then, add chopped tomatoes and cook until they become soft and mushy.

Now you have to add all the chopped vegetables in the pan and fry for a few minutes until they are half cooked.

Step 4
Now you have to add half cooked vegetables and tamarind pulp to cooked daal. Mix well. Pressure cook for 1 whistle.

Now heat oil in a deep pan and add mustard seeds. When the seeds start to splutter, add cumin seeds, Coriander seeds, asafetida, dried red chilies and curry leaves. Fry for a few seconds until the aroma comes out.

Step 6
Now add sambar powder and red chili powder (if using) and fry for a minute until the spices are well roasted.

Step 7
Shift the cooked dal and vegetables from the cooker to the deep pan and mix well. Add enough water to bring the sambar to your desired consistency. Bring the mixture to a boil.
Adjust the salt and spice levels to your liking.
Now you can add finely chopped green coriander leaves.
